Oven Baked Carrot Fritters are super delicious and easy to make vegetarian fries. I cook them in the oven to make them healthier. The harrissa and coriander sauce complemented them perfectly.

Ingredients for 4 servings:
500 g carrots
300 g potatoes
1 bunch of spring onion
1 pinch of nutmeg
½ tsp ras el hanout spice
2 eggs
100 g cheddar cheese
50 g rolled oats
50 g all-purpose flour
2 tbsp olive oil
Salt and black pepper
For the sauce:
100 g sour cream
100 g cream cheese
Chilli sauce
½ bunch of coriander
